What’s your breakfast routine?
During the week, I’m fortunate enough to work at a place that not only offers lunch, but also a quite nice breakfast selection with freshly baked bread and different types of yogurt and cereal. So I usually only drink an espresso at home and then have breakfast as soon as I get to the office. Most days, that’s two slices of “knækbrød” with cheese and some fruit.
But on the weekends, I love making breakfast! Sometimes I go all out and make waffles or pancakes. Sometimes we’ve been out drinking and need a hangover breakfast of scrambled eggs and bacon on a chili-cheddar bagel (Irma has those now, frozen, but still pretty good!).
But oatmeal (or porridge, or grød, whatever you prefer to call it) is an all-time favorite for slow weekend mornings. It’s quick and easy to make and really versatile – you can get creative with your toppings! I got really inspired by GRØD, who brought the somewhat boring breakfast food to a new and exciting level.
Today, I thought I’d share my super simple, super quick recipe with you – and it’s vegan to boot (if you opt for agave syrup)! Of course you can substitute normal milk or any other plant-based milk, if you prefer. I just love the nutty flavor and natural sweetness of almond milk. My favorite start to the day!
Basic almond milk oatmeal
for 1 serving
1/2 cup (50g) rolled oats
1 cup (250ml) unsweetened almond milk
1 tsp agave syrup or honey
pinch of cinnamon or vanilla
Combine all ingredients in a small saucepan and bring to the boil over high heat. Turn heat down to medium-low and cook for about 6-10min, until the mixture has thickened and has reached the desired texture.
Now you just generously heap on your favorite toppings. I’m currently totally in love with the combination of a sliced kiwi, a handful of blueberries, and about 15g of dark chocolate, chopped up. The chocolate starts melting on the hot oats – scrumptious!
Some other excellent topping combos:
- a spoonful of dulce de leche, a small apple, cut into chunks, and some chopped hazelnuts
- two spoonfuls of apple sauce with a bit of maple syrup and toasted almond slices
- one sliced banana, a spoonful of chunky peanut butter, and some shredded coconut
- strawberries, a spoonful of skyr, and a drizzle of honey
- one or two fresh figs, pomegranate seeds, and a spoonful of dulce de leche
One serving of the oatmeal base has 277 kcal, 8g fat, 36g carbs, 6g fiber, 6g sugar, and 16g protein.
