On my mind

I just returned from beautiful Iceland earlier this week – the nature was absolutely stunning. I could’ve just driven for hours, looking at the scenery. The one thing I will say, though, it was a bit crowded. My friend, who I was travelling with and who visited Iceland last year, said it got much more crowded since then, even.

Either way, it was still an incredible trip, and I’d love to go back during summer time to enjoy more of the beautiful landscapes, waterfalls, and hot springs! There’ll be tons of pictures coming up on the blog soon, so keep an eye out for that.

Since I haven’t had time yet to edit anything – the flight back was super early in the morning so I was kind of busted all of Monday, and went back to work yesterday – I thought I’d share a little bit of what’s currently on my mind.

My local area of Sluseholmen and Sydhavn was in desperate need of a new coffee place since Wolfie, which I loved, closed its doors. Looks like South Harbour Café is making a play – it looks super cozy, so I’ll have to check it out soon!

Spring means plants, and my Pinterest is overflowing with ideas – I even made a special “Greenery” board! Yesterday, I extended my collection and got a new aloe vera plant as well as a cute little succulent with round laves that I don’t know the name of.

The gals from Scandinavia Standard just published a detailed guide on the best kanelsnegle in Copenhagen – including a thorough anatomical analyses! I actually taste-tested cinnamon buns as well a while back – here’s the post. We only have one overlapping snegl between the two posts, so if you put them together, they give you a really good overview!

I’ve been looking for a nice big piece of art to hang over our couch for quite a while now, and have come up empty so far, so I’m going to attempt creating my own! Inspired by Francois et Moi (one of my fave blogs to follow!), I’m aiming for something like this beautiful large brushstroke art piece. I’ve already bought the canvas and paint – wish me luck!

My Instagram is overflowing with photos from new restaurants in Copenhagen – high on my list are The Organic Boho, Slurp Ramen Joint, and California Kitchen.

I’m a big fan of podcasts, and am currently obsessed with Sara Tasker’s new podcast, Hashtag Authentic, a podcast for creatives. Sara is an Instagram genius and shares great tips on her blog, Me and Orla. On her podcast, she details her successful strategies for growing an audience via genuine action and interaction.

I’m also totally obsessed with Skandinavisk’s Lempi scent. I need this in my apartment, like, yesterday!

Our plans for the big U.S. trip in the fall are starting to take shape! We just started making the first bookings, and my brain can’t stop planning, strategizing, organizing, researching, and just generally freaking out about it! I swear, I won’t be able to stop crying when I get back to New Orleans, because feelings! I’m listening to Børns’ “American Money” up and down because somehow that’s the perfect song for that road trip!

Finally, I’ve found myself a new series to binge on: Black Sails. Anyone else watching this? It’s actually really good, kind of like Vikings, but with pirates! I also find myself wanting to live on a tropical island right now, sipping some rum… The series is on HBO Nordic.
